These Thai turkey burgers are sooooo good! I made a batch last week and ate them for dinner 5 nights in a row!
Microwave Protein Fudge Muffins!
These look so tasty, are SO low in calories and look like a perfect, quick breakfast!Ingredients:
- 2 egg whites
- 3 tsp applesauce
- 2 tsp coconut flour
- 1/2 tsp baking powder
- stevia or other granular sweetener to taste
- 1 tsp cocoa powder
Directions:
- Spray bowl with non-stick cooking spray
- Mix all ingredients with a fork (or any utensil)
- Microwave for 2:30-4+ minutes, depending on your microwave.
Makes one muffin, 65 calories each and 8 grams of protein! :)

Triple Chocolate Chunk Muffin Knock-Offs of Whole Food’s 6 Dollar per 4 Chocolate Chunk VitaTop Muffins
Ingredients:
1 3/4 c oats
- 3 egg whites
- 3/4 cup unsweetened cocoa
- 1/2 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
- 1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
- 1-1/2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup hot water
- 1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
- 1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)
Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.
Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.
Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!
Cool muffins before removing from pan. ENJOY!!!
Servings: 12 Big Muffins or 24 Smaller Muffins

My favorite banana “ice cream” recipe.
Slice up a banana (while it’s in your favorite stage or ripeness) and put it into a freezer safe container and freeze for 1+ hours. (I do this once a day and leave it overnight for the next day.)
When frozen, place the slices into a food processor or blender along with 2 Tbsp of baking cocoa and 1/4 cup of light vanilla soy milk (or almond milk, or any milk of choice.)
Nutrition: cals: 148kcal | fat: 1.38g | carbs: 35.75g | prot: 4.50g
You can substitute one Tbsp of cocoa for a Tbsp of peanut butter, making this like a chocolate peanut butter ice cream, but it will increase the calories, fat and the protein.
Ha ha, ice cream cravings! Kiss my butt!

Had a ginormous chocolate craving tonight! I’m normally never crave sweets but tonight I needed something or I was going to kill someone! Since I don’t keep any actual chocolate in the house I had to get creative. I found a recipe online and tweaked it to make it a little better for me.
This is my tweaked yet still amazing chocolate mug cake:
In a bowl beat the egg. Then add all of the remaining ingredients. Pour into a mug and microwave for 1 minute. Then eat!
